Recipe: Boiling Fried Egg in Tamarind Sauce
When I try to eat vegetarian, I can’t run away from egg dish. Here is my favorite Thai dish. Try it at home when you already have Tamarind Paste or Fresh Sour Tamarind. Put salt to water 1 teaspoon then,boil the eggs around 4-5 eggs for 15-18 minutes from cold water. Crack the shell out. Prepare the hot oil 1/2 cup for fried the egg. Put the egg to hot oil and let it fry until the skin look like the fry egg (crispy brown). Then, put into plate.
Slice the red onion (small red one) thin slice for 2 big tablespoon. Put the vegetable oil 1 1/2 tablespoon(one and a half). warm up the oil until warm and fried onion until light brown evenly,then, put aside. Add Tamarind 2 tablespoon, 3-4 tablespoon of sugar , 2 tablespoon of fish sauce and 1/4 cup of water. Stir it well and let it thicken a bit like very light syrup. (keep stir when sauce is boiling, not too thick). Add fresh cut chili 3-4 chili and mix to sauce.
To serve: Cut the egg in half add the sauce to the egg and fried onion on top (like photo). This dish can serve cold.
